Baked Zucchini with a dollop of mayo

  • 1 quantity Zucchini
  • 4 cloves mashed garlic
  • 1 tbsp salted butter
  • 1 tsp grounded black pepper
  • 1 tbsp chopped parsley leaves
  • 2 tbsp grated cheese


  • Pre-heat the oven to 200°C.
  • Cut the zucchini into one-cm thick slices.
  • Mix together the mashed garlic, butter, pepper and chopped parsley leaves.
  • Use a butter knife and spread the mixture evenly over the zucchini slices.
  • Top each slice with some grated cheese.
  • Line the prepared zucchini on a baking sheet.
  • Bake it for 10 minutes or until the zucchini turns golden brown.
  • Serve it with mayo on the side.


This recipe works best when paired with parmesan cheese.
