Chicken in mushroomy wine sauce

I have been wanting to make some chicken in a rich wine sauce since I bought some cooking wine from Mauritius as a souvenir. So, last weekend when my sister insisted on opening that bottle up, I quickly prepared this creamy delight which was quite a hit with the both of us. You can imagine how savory it would have been that once we fed on this delicious bowl of chicken, we did not quite hesitate to prepare a second bowl for the next day.

I usually pack my chicken recipes with a lot of yoghurt. It goes very well with Indian dishes and acts as a very good tenderizing agent for the chicken. But this time, the wine did the trick.The chicken being cooked in the wine and cream ends up being very tender and juicy. Wine definitely adds another level of complexity to the dish, packs the whole dish with a lot of flavors. 

This is one such recipe which takes the minimum of efforts but comes out with flying colors. I am sure this is going to be my go-to recipe when I am being very lazy but still need a mouth-watering plate of food at the end of the day. And in those days when I want to be in my pajamas and hide inside the blanket, what can be more awesome than a warm meal of creamy chicken. With winter already here, sounds like quite a plan to me 🙂

Chicken in mushroomy wine sauce

This is a delicious recipe made with boneless chicken, wine sauce and a lot of cream. Can be paired with some garlic bread or served with rice.

  • 1 quantity onion
  • 6 cloves garlic
  • 0.5 kg chicken breasts
  • 1 tbsp butter
  • 100 gms button mushrooms
  • 1 tbsp wine
  • 1 cup cream
  • 0.5 cup milk
  • 1 tbsp pepper
  • salt as required
  • parsley (for garnish)


  • Rub the chicken breasts with salt and pepper.
  • Add some butter to a frying pan and fry the chicken breasts for 5 minutes. 
  • Meanwhile, add butter to another pan and saute the garlic and onions.
  • Add mushrooms and fry it for 3 minutes.
  • Next add the chicken and the wine and let the chicken cook in wine for 3 minutes.
  • Add the cream and milk and cook until you have a creamy consistency and the chickens are cooked.
  • Garnish with parsley and serve it with either some bread or some herbed rice.
