Baked Zucchini with a dollop of mayo

Who doesn’t love to prepare a dish which is easy to make and yummy on the palate? 

This preparation barely takes any time to prepare, requires minimal ingredients but is definitely one which stands out from the crowd. The trick is to bake it at high temperature for a short amount of time which results in perfect caramelisation on the outside and juicy on the insideThe crunchiness of the zucchini with the creaminess of mayo is a match made in heaven. I am sure that even those who are not fan of this summery vegetable cannot stop themselves from popping these crackers into their mouth.

This recipe evolved from the garlic bread I prepared last night. Being in India, Zucchini is one of those vegetables which is not very abundantly available with the local vendors. One has to go to a supermarket and buy them. I originally bought the zucchinis for preparing a salad. More on that later on the blog. So, I had some leftover zucchini from the batch and thought why not use the same old garlic bread recipe but replace the bread with zucchini. And I loved how it turned out. It is a perfect dish for any meal and can very easily go as sides for a main dish as well.

  • 1 quantity Zucchini
  • 4 cloves mashed garlic
  • 1 tbsp salted butter
  • 1 tsp grounded black pepper
  • 1 tbsp chopped parsley leaves
  • 2 tbsp grated cheese


  • Pre-heat the oven to 200°C.
  • Cut the zucchini into one-cm thick slices.
  • Mix together the mashed garlic, butter, pepper and chopped parsley leaves.
  • Use a butter knife and spread the mixture evenly over the zucchini slices.
  • Top each slice with some grated cheese.
  • Line the prepared zucchini on a baking sheet.
  • Bake it for 10 minutes or until the zucchini turns golden brown.
  • Serve it with mayo on the side.


This recipe works best when paired with parmesan cheese.
